The MSc Human Nutrition and Dietetics students at the ¾ÅÉ«ÊÓÆµ recently held an innovative New Food Product showcase event, highlighting their creativity and expertise in developing novel, nutritious products.  

The event featured a diverse array of healthy, delicious novel food products developed by the students, aimed at niche areas of the market for specific target populations. 

Each product was specifically designed to address various clinical conditions, such as options for individuals living with diabetes, lactose-intolerant individuals, and vegan diets. Attendees had the opportunity to sample unique items, including nutrient-rich snacks, plant-based meal alternatives, and ready-meals tailored for busy lifestyles.  

The showcase not only demonstrated the students' skills in food science and product development but also facilitated discussions on the opportunity that exists in the food sector to create new products for vulnerable populations. Members of the MSc.  

Human Nutrition and Dietetics programme along with partners from the Limerick College of Further Education were in attendance and praised the students for their initiative and creative concepts in promoting greater awareness of a wide range of dietary issues facing consumers today. 

BiaSol, a company developed by a UL graduate, producing clean-labelled, upcycled grain snack products sponsored the Best New Food Product Prize at the event which went to an innovative plant-based savoury power-ball called ‘Planted’.
